Our Son has two loves in his life right now (other than his amazing parents!): Chicken Nuggets, and minions! I’ve come to the point in my life where I’ve accepted that I always need to keep chicken nuggets in the house and anything with the minions in it close by! So to celebrate the release of theย Illumination Entertainment’s Minionsย movie.ย All rights reserved.ย , I put together a healthy and delicious baked popcorn chicken recipe with amazing Minionsย inspired dipping sauces.
If you’re like our family and have a picky toddler that you can always count on eating chicken nuggets, this baked popcorn chicken recipe is right up your alley. It uses simple ingredients: panko, flour, egg, chicken, and some seasonings, and obviously, baked cutting out any unnecessary fatty oils. They’re super crispy and delicious you wont even miss that they’re not fried.
Now that we’re done talking about how healthy they are, lets get them slathered in these awesome dipping sauces!

When we bought the movie I thought it would be fun to do a Minions movie night and treat us all to something special and Minons themed. Since we’re not going to put the time into make anything that looksย like a minion, weย might as well put the time in to make a delicious meal, and we canย get the kids excited by telling them a little story on how each of these sauces were inspired, or made by each minion,ย fromย Minions ยฉ 2015 Universal Studios. Bob, since he’s more of the child of the three, gets the delicious bacon ranch, because what kid doesn’t love ranch? With a little addition of some fresh-cooked bacon makes this dipping sauce irresistible, and you’re going to want to make this the biggest batch of the three.

Kevin, who loves to tease the others, but has a sweeter side and cares for the pack, gets a lemon-honey Dijon mustard. For those of you who love honey Dijon dipping sauce, this has a zesty kick with an addition of fresh lemon zest and juice!
Then there’s my personal favorite, Sriracha Hickory Barbecue sauce! Like my favorite minion Stuart, this is the rock-star of the show! The ranch may be the kids’ favorite, but this sauce might be the parent’s favorite! It’s got a amazing smokiness and heat that will make you smile (or sweat) the whole time enjoying this!

Baked Popcorn Chicken With Delicious Dipping Sauces
Ingredients
Baked Popcorn Chicken
- 1 lb boneless skinless chicken breast
- 1 tsp salt
- 1 tsp pepper
- 1 cup flour
- 2 whole eggs
- 1 cup panko
- 2 tsp poultry seasoning
Lemon Honey Dijon Sauce
- 1/2 whole lemon
- 1/2 cup honey dijon mustard
Sriracha Hickory Barbecue Sauce
- 2 tbsp sriracha
- 1/2 cup hickory barbecue sauce
Instructions
Baked Popcorn Chicken
- Preheat your oven to 425F. Cut your chicken breasts into 1 inch cubes and season with salt and pepper.
- Set up your breading station with 1 bowl for flour, 1 bowl for the egg wash, and 1 bowl panko with poultry seasoning mixed in.
- Take each cube of chicken and dredge in flour, cover int he egg wash, coat in panko, then place on a cooling rack.
- Repeat this process until the entire cooling rack is filled up, leaving about 1/2 inch or less in between each chicken cube. Bake for 15 minutes. While the chicken is baking, make your dipping sauces
Dipping Sauces
- Squeeze about a half of a lemon into 1/2 cup of honey-Dijon mustard. Grate about 1/2 tsp of lemon zest and whip together; Cover and store in the fridge.
- Chop your cooked bacon and stir into 1 cup of ranch salad dressing; cover and store in the fridge.
- Stir 2 tbsp (more or less depending on the heat you can take) into 1/2 cup of hickory barbecue sauce; cover and store in the fridge.
- When the chicken is done baking, serve in bowls with the condiments out for the whole family to enjoy!
