Dutch Baby With Mixed Berry Compote

If you’ve ever had Dutch Baby, you know what a special treat this breakfast can be. It’s light, fluffy, and super satisfying! Best part is they’re perfect candidates to put whatever you want on top of them.

Since today is Mother’s Day, we decided to treat mom to a special breakfast in bed and serve up a Dutch Baby along with a mixed berry compote as the topping!

I want to make this Mother’s Day special. Its the last Mother’s Day my wife has as a parent of an only child. Next year we’ll have 2 children to help us celebrate. We’ll as much as a 6 month old baby can help.. which is basically by pooping in her diaper.

I included Brayden as much as I could include a 3 year old into cooking breakfast, to try and start a tradition of making mom breakfast in bed for Mother’s Day. Getting my children inspired to help out in the kitchen for holidays will be a HUGE win. Nothing says holidays like food, family and cooking.

As little as he could do since the majority of this recipe includes a hot skillet, he was super excited to help. He had a huge smile while spreading butter on the skillet, rinsing berries and put them in the pan. You should have seen the look on his face sprinkling sugar all over the Dutch Baby.

A Dutch Baby takes a little time to prep. The batter is A LOT thinner than your average pancake batter. I recommend that you let it sit for about 15 minutes, to let it thicken up as much as possible. But don’t freak out when it pours like liquid, that’s how its supposed to be.

And the mixed berry compote is definitely something you’ll want to make. It goes great on top of the Dutch Baby, but also makes an excellent ice cream topping for later in the night! You can save a little time by cooking this up ahead of time. I suggest cooking this fresh, and can easily be done while the dutch baby is cooking in the oven.

Dads – seriously, if you want to score big points with mom, make breakfast in bed with the kids!! I definitely enjoyed cooking breakfast with my son, as much as my wife enjoyed being served breakfast in bed by her two boys!

Ingredients

Mixed Berry Compote

Instructions
  1. In a blender mix flour milk, sugar, eggs vanilla extract and orange zest.
  2. Set aside and let sit for about 15 minutes. Preheat oven with a 8-10 inch skillet in the oven.
  3. When the oven is preheated, melt butter in the skillet; pour batter into skillet and place back in the oven; cook about 15-20 minutes.
  4. While the dutch baby is cooking, add strawberries, raspberries, blackberries, agave nectar, cinnamon and water into a pan on medium heat. Cook down, stirring occasionally for about 10 minutes, let cool for 5.
  5. When the dutch baby is ready, top with powdered, more berries, and compote. Enjoy!
