Turning your house into a Rotel Famous Queso house is ridiculously easy. Call up the buddies, lead with “I’m making dip” and get the party started! My favorite team was playing over the weekend and I didn’t want to watch it alone. Best way to get the gang over to have a watch party? QUESO!

I had a little get together to watch our favorite team play, and within minutes, I had this cheesy jalapeno pretzel ring filled with Rotel Famous Queso Dip waiting to be devoured. Serving up this delightfully warm dip had everyone super excited about one thing – The Queso Dip.

Because our team was doing horrible! I mean awful. The only thing that saved the night was good company, and dipping those pretzel bites into that queso dip!

Even if you’re just making a quick dip, without the pretzel ring. It takes no time at all for this one-two punch queso dip to be made. Velveeta Cheese, Rotel Diced tomatoes thrown into a pot and melted down is ready to eat in 10 minutes! Its a staple dip that everyone will enjoy at your get-together, and so versatile if you’re looking to snazz things up too!

I used some canned bisquits, placed them in a ring in a skillet, then cubed the Velveeta and poured in the rotel to make the famous queso dip in the center. Threw it in the oven and it was all I needed to do.

How easy is that? Its the perfect snack to put together whether its to entertain some friends at your next event.

About halfway through the game the worst thing happened. The dip was gone!! “Dude, can you make some more?” uh… Well I guess its a good thing I had the good old food blogger’s “double batch, in case the first batch isn’t photogenic” quantity!

I got another batch going during the break and we were on to round two. See? Sometimes being a food blogger does have its perks for friends and family!!!

Instructions
  1. Set oven to 350. While the oven is preheating, bring water and baking soda to a boil. Take refrigerated biscuits from the can, cutting each in half and placing into the pot; about 1 minute
  2. take each biscuit from the water into a skillet and place in a ring around the outer part of the skillet. Brush top with egg wash (using the egg, whisked in a small cup with 3 tbsp water) add sliced jalapenos.
  3. Take The Velveeta cheese cubes and place in the center of the skillet, pouring RO*TEL diced tomatoes on top. Place in the oven.
  4. Cook for about 30 minutes until the bread is nice and brown. Let cool for about 5 minutes. Enjoy!
Recipe Notes

Your queso will probably develop a little "skin" on top after its been cooked. just stir it to make sure its all nice and gooey!
