The weather has been so nice lately out here that I can’t resist but grilling whenever possible! Even burritos must have something grilled in them! I have a super simple yet delicious way to grill shrimp using a little butter, garlic and lemon juice! It’s packed with flavor and has a great smokey flavor from the grill that you just can’t resist during the summer time!
I’ve made shrimp like this a few times before on salads, rice bowls, or just along side some steak and it’s always so freaking good! It’s got a light and fresh taste with the cilantro lime rice and black beans, kinda gives it a Chiptole burrito feel to it without having to spend a lot of money!

Avocado Pico De Gallo
This burrito is a perfect candidate for my avocado pico salsa. So make a big batch and store some for later just for this recipe! Or, just go grab some lame guac off the shelf.. you could just do that..
Serve Family Style
Make life easier on yourself. Get the rice, beans, avocado pico de gallo, and everything else you need for the burrito out on the table. Let everyone put them together themselves. You’ll get the family fed a lot quicker, and their will be more shrimp that gets to the table because you wont have as much time to eat it! It’s a fun way to include the kids and get their hands a little dirty making their food!

On To The Recipe
Grilled Lemon And Garlic Shrimp Burrito
Ingredients
Shrimp
- 1 pound shrimp 31-40 count
- 1 clove garlic
- 2 tbsp butter
- 1/2 whole lemon
Rice
- 1 cup basmati rice jasmine works too
- 1/4 cup cilanto
- 1 tbsp butter
Burrito Ingredients
- 16 ounces black beans
- 8 ounces colby cheddar cheese
- 2 cups Avocado Pico De Gallo
- 4 medium flour tortillas
Instructions
- Get out the avocado pico, and heat up your black beans. Then go heat up that grill!
- Cook up your rice in the rice cooker. When it's done fold in your butter, chopped cilantro and lime juice, set aside.
- In a pan warm up 2 tbsp butter and 1 clove of chopped garlic, squeeze in the lemon juice. Don't cook this for too long you don't want the butter turning brown, we just want to get the butter melted and the garlic to release it aroma.
- Toss your shrimp into the pan make sure it's evenly coated.
- Place the shrimp on to a grill pan or if you're feeling mcgiverisvh, poke some holes into tin foil and place that on the grill like so.
- Cook the shrimp for about 2 minutes, then flip.
- Cook for another 2 minutes. You should have some amazing tasting shrimp ready!
- Serve family style. Have everyone throw rice, black beans, avocado pico, cheese and shrimp onto a tortilla and roll it up! Enjoy!
