Avocado Toast? Psshhโ€ฆ How about an Avocado Toast bagel, topped with a spicy egg? Thatโ€™s how you do Avocados justice!

Now that Avocados are in there prime this season, Theyโ€™re constantly on sale. Which is great right now, but what about when that sale is over?

Do you really think I want to pay full price on that hipster gold?! I think not..

Anytime I see a good sale I buy my avocados in bulk. To keep them from in their amazing form all year around, one trick I like to use is vacuum sealing them in my FoodSaver FM3900.

After cutting an Easy Seal and Peel Bag to size, Iโ€™ll put about 5 or 6 halves in and hit that vacuum and seal button, toss them in the freezer and viola! Iโ€™ve got avocados on the cheap up to 6 months down the road! They even keep MUCH longer in the fridge for immediate use!

The Easy Seal and Peel Bags open so easily too. I donโ€™t need to cut them open or anything, just peel it open by hand and Iโ€™m ready to get started on some Avocado Toast!

After taking my avocados out of the Easy Seal and Peel Bag, I mashed them lightly with a fork with a little salt, pepper, and minced garlic.

Then I toasted my bagels with a little butter until brown and topped with a fried egg and red pepper flakes. This is how I do avocado toast!

Now you have avocados perfectly in season all year around and an amazing avocado toast recipe all in one! Donโ€™t say I never did anything for you ; )

Spicy Egg Avocado Toast Bagel using Vacuum Sealed Avocados

Ingredients

  • 3 large avocados
  • 1 tsp kosher salt
  • 1/2 tsp minced garlic
  • 1 tsp red pepper flakes
  • 4 large eggs
  • 4 halves bagels
  • 2 tbsp butter

Instructions

  • In a bowl, roughly mash avocados, with salt, minced garlic and red pepper flakes; set aside.
  • In a pan, fry 4 eggs in butter and set aside. lightly butter your bagel halves, then place on the pan face down to toast.
  • assemble your bagels with avocado, egg and a little more salt and red pepper flakes. Enjoy!
