What in the world could take a Rueben sandwich with homemade pastrami to the next level? How about topping it with crisp potato chips and give it some time in a panini press?

I don’t know about you, but I’m in!

In case you haven’t seen, I spent some time on a homemade pastrami recipe using a corned beef packer. And with all that lovely pastrami on deck, you’ve got to make a Rueben sandwich!

And to top things off I’m using Kettle Brand Potato chips – or as my son calls them, “Mommy’s Favorite Chips”. Which I never get because I’m pretty sure I introduced her to Kettle Brand chips, but I digress.

Her favorites are Salt and Pepper, but I love keeping it simple and going with Sea Salt (sometimes Himalayan Salt when I’m feeling fancy) for this delicious Rueben sandwich.

I love how well Kettle Brand chips hold their crunch and make the perfect companion for a sandwich that’s got a bit of wetness to it.

Even as they sit on top of a little sauerkraut, they hold their crunch to the end, giving my Pastrami Reuben Panini great texture from start to finish.

Now for the pastrami, if you don’t have the time to make your own (which is a labor of love – so I get it) make sure to find some of the good stuff. I love getting pastrami slices from the refrigerated aisle since they’re a little thicker, but either way this is going to be a killer sandwich!

Whether you’re one to relax with the family and watch the game or invite some buddies over and entertain on a Sunday, this is going to get everyone smiling and asking for more!

Pastrami Reuben and Potato Chip Panini

Ingredients

  • 1 bag Kettle Brand Sea Salt Chips
  • 1 lb sliced pastrami
  • 8 slices rye bread
  • 1 cup sauerkraut
  • 4 slices swiss cheese
  • 1/2 cup ketchup
  • 1/2 cup mayonaise
  • 1/2 cup relish

Instructions

  • Preheat panini press to medium high heat. In a small bowl stir together ketchup, mayo, and relish; slather a heaping amount on the bottom slice of rye bread.
  • Top bread with a healthy dose of pastrami, swiss cheese and a light layer of sauerkraut. Top with chips and the second slice of rye bread.
  • Press in panini until cheese is melted; about 3 minutes. Serve along side more chips and enjoy!
