Bacon Egg and Avocado Breakfast Toast
Nothing beats a nice and easy to make breakfast. Eggs scrambled. Bacon is cooked. Toast is covered in melted cheese. combine it all to make the ultimate breakfast toast!
These are the kinds of breakfasts that get me excited! Loads of flavor, texture and it just makes me happy. The wife and I enjoyed the house void of a toddler, since he was in school so I treated us to a nice, yet simple breakfast to get the day going.
Albeit she had to wait an hour before getting hers because, you know. I have to take photos! #SorryNotSorry
Using a nice artisan bread from our local bakery, loaded with sunflower seeds and grains. I placed them in the over to toast with some slices of cheddar cheese. With my bacon already cooked, the eggs just need to get scrambled, and this is a fairly simple recipe to throw together.
If you’re looking to spice this up a bit, try topping with some red pepper flakes or your favorite hot sauce. I’m on a Texas Pete’s kick right now. It’s got a Tabasco type of flavor, but I enjoy its flavor much better than Tabasco.
Bacon Egg and Avocado Breakfast Toast
Ingredients
- 6 whole eggs
- 4 slices bacon
- 1 whole avocado
- 4 slices bread
- 1/8 tsp salt
- 1/8 tsp cracked pepper
- 1 tbsp butter
Instructions
- Cook bacon and set aside, leave about 1 tbsp of bacon dripping in the pan. preheat oven to 425. Chop bacon into small pieces.
- Crack eggs into a bowl with salt and whisk until completely yellow. Add into pan with bacon drippings over medium heat. Stir occasionally until full coagulated and then take off heat.
- Place toast on a cooling rack and cover with slices of cheese. Place in oven until cheese is fully melted.
- Top toast with egg, bacon pieces, avocado and cracked pepper. Red pepper flakes would be a nice touch if you like a little heat. Enjoy!
