If you can’t tell I LOVE TACOS. They’re always my “I have no idea what to do for dinner” dinner idea. There hasn’t been a single time I’ve suggested tacos and had any meltdowns in the house over the thought.

What makes this amazing, is this can totally be a leftover idea. Yes, you can totally smoke chicken fresh for this recipe, which is a great idea for the weekend.

But if you’re smoking chicken over the weekend, and have extra. Save it for these smoked chicken tacos.

If you’re smoking chicken specifically for this recipe, I recommend using my bbq dry rub and using apple wood. Smoke low and slow at 220-250 F for about 2-3 hours until the internal temp hits 165 F.

I love doing tacos street taco style, with a little cilantro onion and radish. Feel free to add your own twist to these smoked chicken tacos and make it your own!

Ingredients

For the Chicken

For the tacos

  • 8 tortillas
  • 1/2 cup chopped cilantro
  • 1/2 cup chopped onion
  • 1/2 cup salsa

Instructions

  • Preheat smoker or grill to 220F with apple wood. Liberally coat chicken with BBQ rub. Smoke until internal temperature is 165 F; about 3 hours. Remove and let rest for 15 minutes. 
  • Chop chicken in to 1/4 inch pieces. Serve on tortilla with cilantro, onion, radish and salsa. Or use your own favorite toppings. Enjoy!
