Chimichurri and Barbacoa Fries

I made some bomb barbacoa the other day. After eating them on tacos, I knew they’d make excellent barbacoa fries. Like my carne asada fries, or any protein topped cheese fries, using leftover grilled meat is always a good choice!

Using a skillet, you can either cook barbacoa fries in the oven, or if you’re trying to keep the kitchen cool, get them cooked on the grill. If you can’t tell, I hate being inside during the warm season, and find any excuse to cook outside!

Using chimichurri really adds a nice flavor and goes really well on fries alone too. Smothering fries with cheese, barbacoa as well? Doesn’t get much better!

I love recipes like these because when I come home on a Monday from work, I don’t really feel like cooking since the weekends are full of that. This is just so simple. Frozen fries, leftover barbacoa and chimichurri. Dinner is served!

If you have picky toddlers in the house, this might not be a winner, I know it wasn’t for me. But he ate the cheese and fries and a little barbacoa on the side with no problem.

I don’t get kids. its the same exact meal, just not mixed together..

Who am I kidding? I can’t stand my food to touch so I’m not much different!

Chimichurri and Barbacoa Fries

Ingredients

  • 1/2 lb frozen fries
  • 1 cup grated cheddar cheese
  • 2 cups shredded barbacoa
  • 1/2 cup chimichurri

Instructions

  • add frozen fries to a skillet, cook in an oven or grill at 350 for about 10 minutes
  • pull the fries out, and top with cheese and barbacoa, placing back in the oven; about 5 minutes
  • When the cheese is nice and melted, take the skillet out of the oven and let rest for about 3-5 minutes. top with chimichurri and serve. Enjoy!!!
