Garlic and Red Pepper Asparagus
One of my favorite sides to prepare is asparagus. I love the texture and flavor of well prepared asparagus, and its so simple to season, it makes for a great last minute side!
When I was a kid I HATED asparagus. Unfortunately for me, every time it was made for me it was overcooked, making it super soggy and hard to eat. Ugh, I’m already gagging from the flashbacks.
Much to my surprise, years later when it was made with some simple olive oil, salt and pepper, and lightly grilled, I could not believe how amazing these things are!
When they still have a snap to them they’re quite delicious, and I find myself eating so many of them that I end up regretting it later when I have to use the restroom. If you’re a big asparagus eater, you know what I’m talking about…
This asparagus recipe has got some spice from red pepper flakes and a nice hint of garlic, that adds to what is already an amazing side on its own. It’s great when you want to snazz up your dish, or just want to change it up on a week night. Either way, don’t plan to have leftovers.
This can be broiled, or grilled depending on the weather. If you can grill, do it, but throwing in the broiler when the weather is not great, or just you don’t want to get the grill going is a great alternative. Well like this dish, this post is a quick one, so enjoy!
