This Grilled Cabbage Steak With Bacon and Blue Cheese recipe is something I could eat all day long. It’s an ย awesome way to up your game this 4th of July and impress your guests with something to eat alongside the grilled meat you’re going to knock out of the park as well!

The prep for this recipe can easily be done in advance.ย Cook your bacon (saving some of the drippings), and get your cabbage marinated. It only takes 30 minutes, but man, it’s so delicious I’d love to do it overnight to really suck in the flavor!
When you’re ready to cook, just grill it up for about 10-12 minutes and you’re good to go! Top with blue cheese, green onion and chopped bacon and devour!

Grilled Cabbage Steaks With Bacon & Blue Cheese
Ingredients
- 6 slices bacon
- 1 package McCormickยฎ Grill Matesยฎ Smoky Applewood Marinade
- 3 tablespoons vegetable oil
- 2 tablespoons cider vinegar
- 2 tablespoons maple syrup
- 1 head cabbage cut into 6 steaks
- 1/2 cup bleu cheese crumbled
- 2 tablespoons green onion thinly sliced
Instructions
- Cook bacon in large skillet on medium heat until crisp. Reserve 1 tablespoon of the drippings. Crumble bacon; set aside.
- Mix Marinade Mix, oil, vinegar, maple syrup and reserved bacon drippings in small bowl until well blended. Place cabbage steaks in large resealable plastic bag or glass dish. Add marinade; turn to coat well.
- Refrigerate 30 minutes or longer for extra flavor. Remove cabbage steaks from marinade. Reserve any leftover marinade.
- Grill cabbage steaks over medium heat 5 to 6 minutes per side or until tender-crisp, brushing with leftover marinade. Serve cabbage steaks topped with blue cheese, crumbled bacon and green onions.

have a question- the recipe says to mix the package with the oil, syrup, etc but that was barely enough to smear on a couple of slabs of the cabbage…was I suppose to follow directions of mix, then mix in the oil, syrup, etc in the recipe?
Hey Cheri! the measurements are right, it doesn’t make a whole lot of marinade – just enough to coat the cabbage. If you want it slathered in it, you can double down on the marinade servings. I did that once and it really packed in the flavor!
I have never tried cabbage steaks before, but l am a huge fan of grilled dishes, especially when it comes about big flavours. l love the crunch you get from the cabbage and the saltiness of bacon. That blue cheese gives a nice kick to the dish. Superb!

I’ve meant to do some cauliflower steaks with our harvest last year and never got round to it, these sound superb with the blue cheese and bacon… Could you help me out with the Applewood Marinade? I live in central Europe so there is no way I will find the product so a couple of hints on the flavour profile and texture would go a long way. Thank you.
