Grilled shrimp meets avocado toast, but in a summer bite form. This is the perfect light summer tapas style dinner that you need to give a go!
I’m making a margharita style marinade for the shrimp, then whipping up a quick and easy guacamole to top on some grilled baguette slices. It’s light, delicious and full of flavor.
If you’re in to the happy hour mood – which is us for sure on the end of a friday – this makes for the perfect dinner to pair with a cocktail.
It’s like having your own happy hour at home without having to get into your hazmat gear to try and have a semi normal night out in this crazy world we’re in right now!
Man, I hope that statement ages terribly!
And as much as I love to try and have a normal evening out, when you have kids sometimes its just easier to do things at home.
When you have a 2 year old on the cusp of a threenager, dinner time isn’t always the most delightful thing at a restaurant.
And these grilled shrimp and guacamole bites is exactly what Mom and Dad need on a friday. Air fry up some dino nuggets and veggies for the kids.
And that gives me enough time to grill everything up for us!
The marinade is quick. It’s got citrus in it so you don’t need it to sit too long or you’ll have ceviche! it gets just the right amount of flavor and goes great on top of the spicy guac!
I’m always about all things spicy. This guac uses serrano peppers out of my backyard prepper garden.
Ok, its not-so-prepper. If all hell breaks loose, we’re legit living off peppers, lettuce, and tomatillos!
Grilled Shrimp and Guacamole Bites
Ingredients
FOR THE SHRIMP
- 1 lb large shrimp
- 1 tsp paprika
- 1/2 tsp cumin
- 2 oz tequila
- 2 oz triple sec
- 1/4 cup cilantro chopped
- 1/4 tsp salt
- 1/2 tsp cracked black pepper
- 1 loaf baguette
- 1 tbsp butter melted
FOR THE GUAC
- 5 avocados
- 1/4 cup red onion chopped
- 1 clove garlic minced
- 1 tsp kosher salt
- 1/2 tsp cracked black pepper
- 1 serrano pepper finely chopped
- 1/2 tsp paprika
- 1/4 cup cilantro chopped
- 1/2 lime
Instructions
- In a bowl, add shrimp, with paprika, cumin, salt, pepper, tequila triple sec and juice from lime. let it sit in the fridge for about 10 minutes. Preheat grill
- While the grill is preheating, mash avocados, chopped red onion, minced garlic, paprika, salt, pepper, Serrano pepper and cilantro. Mix together, then squeeze in juice from lime. This gives it flavor, but more importantly slows down the browning process.
- Slice baguette into 1 inch slices, and bring them out along with your shrimp to the grill. Brush some melted butter on your baguettes slices and place them on the grill.
- Grill shrimp for about 3-4 minutes per side, until opaque and curled. Bring everything off the grill.
- Chop up your shrimp into bite sized pieces. Add a scoop of guac onto your toasted baguette, along with some shrimp. Enjoy!
