Turkey season is the best season I always say. Ok, I’ve never said that before until just now, but still! The only thing better than Thanksgiving dinner is the abundance of Thanksgiving leftovers you have.


That’s exactly what this leftover Thanksgiving stuffing frittata is all about – continuing the Thanksgiving feast into the next morning!

With a carton of Nellie’s Free Range Eggs, leftover stuffing, some sausage and bacon, this leftover thanksgiving frittata takes 10 minutes to prep, and another 20 minutes to cook. Super easy breakfast to come home to after all your black Friday shopping.

But if you ask me, I’ll be skipping the mayhem and devour this frittata instead!

Your own family’s stuffing recipe will also determine how you dress up your leftover Thanksgiving stuffing frittata. I cooked breakfast sausage and bacon, as well as some extra bell peppers.

But you may already have sausage in your leftover stuffing, or maybe some other awesome veggies. I like to do a version of stuffing that has jalapeno in it, so this really is what makes this recipe so special. It will have your own touch to it.

  • 1 tsp kosher salt
  • 1/2 tsp fresh cracked pepper
  • 3 strips bacon
  • 3 links breakfast sausage
  • 1 bellpepper chopped
  • 2 cups leftover stuffing
