Mac and Cheese Bagel Mini’s

When I see a bagel, I see a blank canvas. Something that I can use to make something amazing. Like Mac and Cheese Bagels toasted in oven, and cut into bite size portions. This is a Dad’s kind of after-school snack!
The night before putting this together I had made some mac and cheese. With the leftovers in abundance, I knew this would be perfect for making an after school treat!
I topped off aย Dave’s Killer Bread Plain Awesome Bagelย with the leftover mac n cheese, a little more cheese, some extra bacon I made from the other mornings breakfast. These bagels were ready for the oven in no time!

When I need to take my son to soccer practice in a couple weeks, I’ll be loading a few of these up in the car on the way to the game for him. After all, amazing snacks help kids out perform others on the field. It’s a scientific fact! Ok, maybe not. But it could be!
I can’t even believe I’m writing that. My son is going to be in soccer this season. When did he get big enough to do that?!
First he’s a big brother, now he’s officially in preschool and ready for after-school sports. Why?! Why does time go so fast when you’re a parent!
Before you go “like I’m going to have time to make this”, This took 15 minutes start to finish to put together. It literally took me more time, to preheat my painfully slow oven than it did to prepare. 5 minutes prep. 10 minutes in the oven. about a minute to cut them up.
Ok, so 16 minutes.
Dave’s Killer Bread Plain Awesome Bagels are a perfect match for this recipe too. The bagel comes out so perfectly crisp on the outside, and still soft on the inside.
And with the melted cheesiness from the mac and cheese, it’s almost like a mini pizza bagel that you never knew you needed in your life!
Mac and Cheese Bagel Mini's
Ingredients
- 1 whole Dave's Killer Bread Plain Awesome Bagel
- 1 cup left over mac n cheese
- 2 strips bacon
- 1/4 cup shredded cheese
- 1/4 cup panko bread crumbs optional
Instructions
- Preheat oven to 425. If your mac n cheese is cold, nuke it for about 30-60 seconds until soft enough stir. Split bagel into two halves,
- Top each bagel half with 2-3 spoonfuls of mac n cheese. Top with bacon, cheese and a little bread crumbs if desired. Place in the oven for 7-10 minutes until cheese is nice and melted. Remove from oven and let rest for about 1 minute.
- Cut each bagel into fours, serve and enjoy!
