Baked Garlic Carrot Fries
Here’s an awesome way to get the kids to eat some veggies, and a low-carb alternative to potatoes, Carrot Fries! Tossed with some olive oil, fresh garlic, salt and pepper, make this a simple side to add to any dish!
These things are super easy to make, 5 minutes prep, then 20 minutes in the oven while you cook your main dish, and taste amazing! The garlic give them a nice savory flavor that makes dipping them in various sauces really delicious! I actually really liked these in mustard. Yes. Mustard.
This has been one of the few times that I’ve actually gotten my son to willingly eat more than 2 bites of a vegetable! I’m calling the carrot fries a win. I don’t care if he drenched it in ranch and then just ate the ranch by itself. IT’S A WIN!
I was turned on to carrot fries a few years ago during a workout program I had done, they weren’t made like this, they had some odd seasonings in them. This was way better. Simple, and loaded with flavor. If you’re a garlic fan, this is right up you’re alley, and you wont want to share!
Just a disclaimer, don’t expect these to be crispy, they eat like a nicely cooked french fry, which is how I like them, just a little soggy. I’m getting hungry all over again, thinking about it. I should have made a double batch!

Baked Garlic Carrot Fries
Ingredients
- 1/2 pound carrots
- 3 cloves garlic
- 1 tbsp olive oil
- 1 tsp sea salt
- 1 tsp ground black pepper
- 2 tbsp fresh parsley
Instructions
- Preheat your oven to 425F. Peel and chop your carrots in 3 inch length, then in quarters length-wise, so they resemble a french fry and throw them in a bowl.
- Mince Garlic; Toss in the bowl with the garlic, salt pepper, and olive oil.
- Place on a non-stick baking sheet making sure they're evenly separated, scoop out any leftover garlic from the bowl on to the carrots. Bake for 10 minutes, flip, then bake for another 10 minutes.
- Serve with your favorite dipping sauces and enjoy!
