Breakfast French Fry and Egg Casserole
French fries for breakfast?! Why not?! With Easter right around the corner I’m sure you’re getting your dinner recipes all assembled, but what about brunch? Easter has always been about the brunch for me, and these breakfast french fries isย the perfect type of egg casseroleย to bring to a family brunch potluck!
Le Creusetย sent me some awesome Easter themed bake-ware in pastel colors that are perfect to put together for showing off at a brunch potluck.ย I’ve been lusting after their cast iron products for quite some time, so I was pretty excited to show off these products for this post!
Sure, you can use any type of potatoes for an egg casserole, but whats the fun in that? Using french fries not only gets the kids excited when you say “Ready for some breakfast fries?!” But it just tastes that much better when you smother them in ketchup or some ranch!
So if you’re planning on putting this together for brunch here’s a tip: Bake the night before, then finish it off with the cheese and bacon on top right before serving. It’ll save you a lot of time in the morning, which I’m sure will be spent wrangling children around the house to get them in their matching Easter get-ups.
One more tip, If you’re a family of crispy bacon lovers like mine, YOU HAVE to put the bacon on top and at the end. Otherwise you’ll have chewy bacon in this french fry and egg casserole. If that’s you’re thing then do you boo boo, but last time I did that I got glares from the Queen, and learned my lesson, fast (for once)!

Breakfast French Fry and Egg Casserole
Ingredients
- 6 eggs
- 2 tsp salt
- 1 tsp ground black pepper
- 1/2 tsp granulated garlic
- 8 ounces Frozen French Fries
- 4 ounces chedder cheese
- 1/2 cup whole milk
- 2 whole bellpeppers
- 6 strips bacon
- 1/2 cup green onion
Instructions
- Preheat oven to 450. Scramble 6 eggs with salt, pepper, granulated garlic, milk, and about 2 ounces of grated cheese. Place in a baking dish with frozen french fries.
- Chop bell peppers and place about half of them in the baking dish and mix in with the fry and egg mixture. Cover with tin foil and bake for about 30 minutes.
- While the dish is baking, Cook 6 strips of bacon, then chop along with the green onions. Have the remaining bell peppers on hand.
- After 30 minutes, remove the tin foil and top with the remaining cheese, bell peppers, bacon and green onion. Bake for another 15-20 minutes until the cheese begins to brown.
- Serve as a side at brunch, or as a main breakfast dish along with some ketchup or ranch. Enjoy!
