Fluffy Cranberry Walnut Pancakes and Cranberry Maple Syrup

Tis the season for cranberry everything! If you’re a cranberry-aholic like me this this recipe is going to be right up your alley! One of my favorite breakfast foods during the holidays is cranberry bread. But I’ve never actually made it myself because I’m too lazy to buy a breakfast bread pan. I’m too lazy to do that, but not lazy enough to make some cranberry pancakes with walnuts!

 

But I mean, thats not enough cranberry. I gotta have┬ámore cranberry! I’ve got a fever, and the only perscription is more.. Ok you get the point. Cranberry Maple syrup is a perfect topping for these cranberry pancakes, and it’s a super simple to make!

The Cranberry Walnut Pancakes have such great texture with the addition of walnuts and by using cranberry raisins, or craisins, It’s really easy to add a holiday flavor using craisins, without needing to prepare fresh cranberries. But I’m not going to skimp out on those fresh cranberries for the cranberry maple syrup!

I used a very light and fluffy pancake recipe that isn’t too sweet, because the syrup is really going to bring┬áthe sweetness level up so you don’t want too much of a good thing. And the tartness from the cranberries. YES!

Prep Tip

Thickness of the Syrup

I added cranberry jelly into my syrup, to give it this really nice and thick consistency one it cooled off, if you rather have a more tradition “syrup” feel, then omit the jelly, and double the water/fresh cranberry amount.

Cranberry Walnut Pancakes
Cranberry Maple Syrup

Instructions
  1. In a pan at medium heat, boil down your cranberries, jelly and water for about 5 minutes until the berries are soft.
  2. Crush the berries and mix until you don't have too much of the chunks left; Add the syrup and let cool.
  3. In a mixing bowl, stir together the flour, sugar, baking powder, baking soda, and salt.
  4. Stir in the milk and oil, then the cranberry raisins and crushed walnuts.
  5. In 1/4 cup servings, pour the pancake mix on a griddle at medium-high heat. Flip after 2-3 minutes.
  6. Let cook for another 2-3 minutes, and set aside; repeat until all the mix is gone.
  7. Top with your cranberry maple syrup and enjoy!
