Its no surprise that us dads love to grill during the summer. And Grilled Shrimp is such a great weeknight recipe to have in your arsenal! Shrimp takes on flavor quickly, so you don’t need to worry about long marinades. My favorite is brushing on a garlic and herb butter while grilling!

For grilled shrimp, I like to use larger shrimp. At least 21-25 count. Also just in case you were wondering, the number when buying shrimp refers to how many you get per pound. e.g. 31-40 count, means you will get around 31-40 per pound. So the smaller the number the larger the shrimp #TheMoreYouKnow

For the Garlic and herb butter, I like to put my butter, garlic, and herbs in a small cast iron skillet on the upper rack on my grill. While the grill heats up the garlic and herb butter will be melted down and ready to brush on your shrimp

A good grilled shrimp recipe like this one is super versatile too! It goes great on skewers like shown, or you can put in on top of a nice salad, or even use for burritos. We’re enjoying them right off the skewers with a little lime juice squeezed over it. It was an awesome day to grill too, so I made sure to grill up some jalapeno bacon wrapped corn too!

Grilled Shrimp with Garlic Herb Butter

Ingredients

  • 1 pound shrimp 21-25 count
  • 1/2 tbsp butter
  • 1 clove garlic
  • 1 tsp thyme

Instructions

  • With your shrimp thawed, begin to put them on pre-soaked skewers; Set aside.
  • Pre-heat your grill to around 350-400F. While preheating, place butter, minced garlic, and thyme in a small cast iron skillet on the top rack; stir occasionally while the butter melts.
  • Place shrimp on the grill, and liberally brush on the butter mixture while its grilling. turn about once every minute and brush more butter on. About 5 minutes or until shrimp is opaque. Serve them up and enjoy!
