One Pan Breakfast and Egg Skillet loaded up with bacon and sausage, with a little fresno pepper for flavor and finished off with fresh cracked sunny side up egg. Do I have your attention yet?

We just got back from a mini-vacation to visit Sequoia National Park, which was such a nice break from life! In case you were wondering, Farberware is a partner of the National Park Foundation, contributing an annual donation of $100,000 to help protect and conserve our national parks!

I took my Farberware Neat Nest pans with us and with a quick stop at the local market had some supplies to make us a killer breakfast before our outing.

And with Farberwares stackable pans (which made packing them super convenient!), I had the option to cook this in multiple pans. But to keep cleanup to a minimum in our little cabin, I turned it into a one pan challenge!


Cooked first are the bacon and sausage, then set aside to drain on a paper towel. With my potatoes sliced thin and cooking in the same neat nest pan to get some of that bacon flavor baked in.

Then I added some fresh garlic, onion, thyme and some fresno peppers for a little added flavor and touch of heat.

Onces they’re cooked, add back in the bacon and sausage, add some cracked eggs and let it cook! Breakfast is ready by the time the kids are dressed and ready to go!


With full bellies from our one pan breakfast skillet, kids dressed, water and snacks in hand we were ready to take on the day.

For years, I’ve wanted to visit Sequoia National Park to check out the larger than life sequoia trees, General Sherman to be exact.

And once we got there, I could tell Brayden was starting to get excited. The windy drive up to the top of the mountain was worth the excitement on his face once we got there!


After the short hike down the trail, there it was. General Sherman in all his glory. Photos don’t do it justice, you really must check this thing out in person to get perspective. But man, is this thing huge!

This trip was so much fun, and exactly what we needed to get away from the busy day-to-day grind. I highly recommend visiting your local national park this summer. And bring some Farberware Neat Nest Pans with you to make this breakfast!

 

One Pan Breakfast Potato and Egg Skillet

Cook Time: 25 minutes

Ingredients

  • 4 strips bacon
  • 4 links pork breakfast sausage
  • 1 large potato cut into 1/8 inch slices
  • 2 tbsp extra virgin olive oil
  • 1/2 tsp cumin
  • 1 whole fresno pepper chopped
  • 2 cloves garlic
  • 1 tsp kosher salt
  • 1/2 tsp cracked
  • 4 medium eggs
  • 2 sprigs thyme

Instructions

  • In your large Neat Nest Pan, cook bacon and sausage until done. Place into the medium neat nest pan with paper towels and keep warm in the oven at 175F.
  • Drain grease from large Neat Nest Pan. Add olive oil with potato slices and garlic. Season with salt, pepper, fresno pepper and cumin. Cook for about 7-10 minutes.
  • Leaving the potatoes in the pan, make room for the eggs. Crack them in the pan and cook until egg whites are opaque.
  • Season with more salt and pepper, add leaves from sprigs of thyme and serve.
