Whole30 Breakfast Casserole

This takes about 10 minutes to prep, then sits in the oven for about a half an hour. You can make this the night before and reheat throughout the week too for a great school morning option!

Whole30 Breakfast Casserole
Ingredients

- 3 strips uncured bacon no sugar added
- 1/2 cup chopped green bellpepper
- 1/2 cup chopped red bellpepper
- 1 cup chopped baby spinach
- 1/4 cup chopped onion 1
- 1 tsp kosher salt
- 1/2 tsp black pepper
