Spicy Jalapeno Cucumber Pineapple Salsa

Hi. I like Salsa. I like Mango Salsa. I LOVE PINEAPPLE SALSA! Seriously, this stuff is amazing –  spicy, sweet and super fresh! I’ve been wanting to make pineapple salsa for awhile after trying some at a restaurant. Now that I have, I don’t know what has taken me so long to make some!

We’ve been eating pineapple salsa all weekend, I had it out on the table with some chips, and then just topped mounds of it on top of some shrimp fajitas we had for dinner. I mean the shrimp fajitas were amazing (naturally, they were based off my chicken fajita recipe), but with some pineapple salsa mixed in adding sweet and spicy? ????

It’s seriously good stuff that you need in your life.

So my pineapple salsa is pretty quick to make, and doesn’t really need to sit and stew for too long, as it has a lot of flavor out the gates. With jalapeno, cucumber, tomato, red onion, cilantro, lime juice accompanying freshly cut pineapple, it’s not going to last in the fridge too long anyways, so just serve immediately after mixing together.

And since El Niño has decided to hit the snooze button it’s be ridiculously warm and dry out on Southern California (Yes I know, life is hard). So in the middle of February, wanting to put together fresh spring-ish food that is cool and fresh, isn’t exactly pulling teeth right now.

Seriously. One day of rain. Is it too much to ask?

Alright so I think you get it. GO MAKE SOME PINEAPPLE SALSA TONIGHT! I mean, you should totally make some pineapple salsa tonight. Top it on some nachos, maybe make some fajitas, or just eat it with some chip. It will go fast. So make sure you get some for yourself before the rest of the family does!

Spicy Jalapeno Cucumber Pineapple Salsa

Prep Time: 10 minutes
Total Time: 10 minutes
Servings: 4 cups

Ingredients

  • 1 medium pineapple
  • 2 tbsp chopped cilantro
  • 1/2 medium red onion
  • 1/2 small lime
  • 1 medium jalapeno
  • 1 medium cucumber
  • 1 small tomato optional

Instructions

  • Cut off the rind from your pineapple, and cut the flesh from the center core, chop into 1/2 inch cubes and place in a bowl
  • Chop your red onion, cucumber, and jalepeno; combine in a bowl with the pineapple
  • Loosely chop your cilantro and squeeze your lime juice into the bowl and mix together.
  • Optionally you can add in some tomato. It will give a nice color to your salsa.
  • Place in the fridge for about 30 minutes, or serve right away. It's going to go quick. Enjoy!
