Weekends for me in the summer means one thing and one thing only: GRILLING! Especially when having some good friends and family over. I love having a cookout and bringing my A-game, by grilling up some delicious juicy burgers. However, sometimes you gotta take care of the ones that aren’t fans of eating meat, and give them a vegetarian option.

I sometimes will do a vegetarian shish-kebab or some other grilled vegetables, but I sometimes I feel like I’m excluding them from the whole “burger” experience, I find that these MorningStar Farms veggie burgers are super simple to prepare, which gives you more time to put your own twist on them with some amazing toppings!

California Veggie Slider with Jalapeno Ketchup

For this slider I used the MorningStar Farms Original Veggie burger, which tastes like your basic hamburger. My twist on this was to make a quick roasted jalapeno ketchup to spice things up and top it with some avocado, cheese and tomato. The ketchup really boosted the flavors and is probably my new favorite condiment!

Mediterranean Chickpea Slider With Sriracha Hummus

This was surprisingly really good, as I thought hummus on a chickpea burger was going to be redundant but the Sriracha really came through! I used my simple 5 minute hummus and added some sriracha to it as a condiment for the MorningStar Farms Mediterranean Chickpea Veggie Burger that I used on this slider. Wow was it good!

Using this hummus with the burger and topping it with some cucumber and red onion was the twist this slider needed! If you have anyone you’re serving that loves Mediterranean, they’re going to love this!

Spicy Black Bean Slider With Cucumber Mango Salsa

If a taco had a cousin, this would be it! I made a fresh, fruity salsa with some heat by throwing together a quick cucumber mango salsa. It was the perfect topping on this MorningStar Farms Spicy Black Bean Veggie Burger. It already has a nice spice to it with black bean and corn in the patty, I’m pretty sure I’ll be eating the leftovers in a taco form!

So take your pick! Or if you want to treat the family make all three and present it as a sampler! If you’re having a cookout it’s even easier, just have the toppings ready to go and have your guests put them together as you grill them!

MorningStar Farms is also hosting a Veg Of Allegiance Program, challenging everyone to pledge a number of meals without meat for one week, and offering prizes to anyone who pledges! I read good information on their site with reasons why to go meatless, stating how much water consumed to produce meat. Now, I don’t think I can ever go meatless 100% but living in water-starved Southern California motivates me to cut back on the meat to help save some water!

Prep

Plan Ahead.

This meal is prep heavy, and cooking is the easy part. If you’re planning this for a weekend, prep the toppings ahead of time and store them away in the fridge! The servings of the toppings are more than enough for a family of 4, so you can get away with using some of the toppings for lunch. Prep the toppings for lunch and make a veggie wrap with hummus and the mango salsa in it. Serve the rest for your sliders!

Re-forming The Patties

While reforming the patties, keep a bowl of water next to you, keep your hands wet. This will help make the patties sticky enough so that they’ll keep their new shape as a slider burger. I found that pressing them hard into a meatball shape with wet hands allowed them to stick together well, then formed them into the patties.

Cooking

They cook just like meat burgers!

These veggie burgers grill up just as a meat patty would! Cook for about 2 minutes on each side and you should have beautiful grill marks and flavor! Toast your buns and lay any cheese after the first flip –  vegetarian cheese for that #VegAllegiance life!!! ????????????

Ingredients

Cucumber Mango Salsa

  • 1 Whole Mango
  • 1 whole tomato
  • 1/2 whole lime
  • 1/2 cup diced cucumber
  • 1/4 cup chopped red onion
  • 1/4 cup diced jalapeno
  • 1 tbsp cilantro
  • 1 tsp salt

Roasted Jalapeno Ketchup

  • 1 Whole japanese peppers
  • 1 1/2 cups ketchup

Sriracha Hummus

  • 15 ounces canned garbanzo beans
  • 1 small garlic cloves
  • 1 tsp salt
  • 1/4 tsp cumin
  • 2 tbsp sriracha sauce
  • 3 tbsp olive oil
  • 1 tbsp water

Sliders

  • 1 pack 12 count slider-sized hamburger buns

California Veggie Slider with Jalapeno Ketchup

  • 2 patties MorningStar Farms Grillers Original Veggie Burgers
  • 1/2 whole tomato
  • 1/2 whole avocado
  • 10 sliced dill pickles
  • 1/4 ounce cheese Optionally vegetarian cheese

Mediterranean Chickpea Slider With Sriracha Hummus

  • 2 patties MorningStar Farms Mediterranean Chickpea Veggie Burgers
  • 3 tbsp Sriracha Hummus
  • 1/4 cup sliced cucumber

Spicy Black Bean Slider With Cucumber Mango Salsa

  • 2 patties MorningStar Farms Spicy Black Bean Veggie Burgers
  • 6 tbsp Cucumber Mango Salsa

Instructions

Cucumber Mango Salsa

  • Cut Your Mango in half, then slice vertically, then horizontally making cubes.

  • Push the center of the mango from the skin side towards you so it makes all the cubs "pop" out, then with a spoon scoop out the mango and place in a bowl.

  • Dice your tomato, cucumber, cilantro, jalapeno, and onion.

  • Add all of it into the same bowl with the mango, squeeze the lime juice, and add salt.

  • Mix it all together and you have a lovely cucumber mango salsa! Place in the fridge until you're read to use!

Roasted Jalapeno Ketchup

  • For the Jalapeno Ketchup, roast the jalapeno on a gas stove, or on a grill if a gas stove top isn't available. Should take about 1-2 minutes on each side. You want a nice char like shown.

  • Split the jalapeno, so it will blend easier. If you want to have a less spicy ketchup, take the seeds out.

  • blend the jalapeno for a few seconds just to get it going.

  • Add in ketchup

  • blend for about 1 minute so that the jalapeno is fully blended into the ketchup. Pour the contents into a bottle and in the fridge until ready to serve.

Sriracha Hummus

  • For the hummus rinse and strain garbanzo beans and place into a blender with cumin, garlic, a squeeze of lemon juice, olive oil, and sriracha. Blend for about 2 minutes.

  • Taste it. Want more sriracha? Add more sriracha and stir in!

  • Place that wonderful hummus back into the fridge until you're ready to serve!

The Sliders

  • For the sliders, you can either thaw out the packages of veggie burgers in the fridge over night, or warm up in the microwave for about 40 seconds. Leave in the bag and mash them up with your hands. Preheat your grill.

  • Take the contents out and pack into slider sized patties. Keep your hands wet to keep the patties sticky enough to maintain a patty shape! You should get about 3 slider patties per pack of 2 veggie burgers.

  • Place your patties on the grill and leave them alone for about 2 minutes. flip and add cheese to the California burger patties. Toast your buns if you wish, and when the cheese is melted take everything off the grill and let rest.

  • While the burgers are resting. you can chop up your additional toppings for the burgers. California Burger gets tomato, avocado and pickles(optional). Mediterranean will get cucumber and red onion.

  • California Burger gets the jalapeno ketchup on the bun, then add tomato and avocado. Add the Sriracha Hummus to the bun for the Mediterranean Burger and top with cucumber and red onion. The Spicy Black bean burger just gets the mango salsa.
