Steak and Mushroom Bites with Asparagus
Steak and Mushrooms go together hand and hand. I love searing off a steak and topping with mushrooms, but what about cubing up some filet mignon, and searing it all in a skillet with mushrooms and asparagus to boot?
Definitely makes a nice change on your steak dinner!
I’ve been exploring the keto diet lately, and been finding new recipes to try for dinner, and these steak and mushroom bites are one of my favorites.
It’s so simple. Yet is full of flavor and texture.
Just a few ingredients for this one – filet mignon, baby portabello mushrooms, asparagus, and some fresh herbs and garlic.
I first seared the filet before adding everything else in, then add in everything else. Once the veggies are tender, your steak is cooked to medium and ready to eat.
If you want your steak cook under, just pull the steak bites our when done, and bring them back in when the asparagus and mushrooms are cooked.
Steak And Mushrooms Bites with Asparagus
Ingredients
- 1/2 lb filet mignon
- 1 cup baby portabello mushrooms
- 1 cup chopped asparagus
- 3 tbsp butter
- 2 cloves garlic minced
- 1 sprig fresh rosemary
- 3 sprigs fresh thyme
- salt and pepper to taste
Instructions
- Cut filet mignon in 1 inch cubes as well as asparagus into 1 inch pieces. Season filet with salt and pepper.
- With a cast iron preheated on high, sear steak pieces in 1 tbsp of butter for about 1 minutes per side.
- Add in garlic, rosemary, thyme and extra butter along with mushroom and asparagus.
- Cover at let cook for about 5-7 minutes until steak internal temperature is around 130 F. Let cool fora bout 5 minutes and serve. Enjoy!
