This is a super easy way to get dinner or lunch on the table. Sweet Thai Turkey Wraps with fresh cut veggies and a from-scratch peanut sauce has sweet with a little heat that is absolutely amazing!

Using Jennie-O Sweet Thai Chili turkey, I cut into 1/4 inch slices making along with some red cabbage, red bell pepper, carrot and some lettuce.

This can be done ahead of time as well making this a great make ahead meal!

Jennie-O’s sweet thai chili turkey breast has a really nice flavor. You get a thai vibe from a hint of curry, along with a little sweetness that doesn’t make it overwhelming

Then just to add a little more of a kick my spicy peanut sauce has a couple drops of red chili oil. Definitely worth making for this turkey wrap!

If you’re looking to make this as a meal prep, try using some butcher paper, and prepare these with the peanut sauce on the side. Wrap in butcher paper and place in the fridge.

These will last in the fridge this way for at least 5 days!

Ingredients

FOR THE WRAPS

  • 1 lb Jennie-O Sweet Thai Chili Turkey Breast
  • 1 cup red cabbage shredded
  • 1 cup red bell pepper julienne
  • 1 cup carrot julienne
  • 1 cup baby spinach
  • 4 tortilla wraps

FOR THE PEANUT SAUCE

  • 1/2 cup peanut butter
  • 2 tsp minced ginger
  • 1 tsp minced garlic
  • 2 tbsp soy sauce
  • 2 tbsp rice vinegar
  • 1 tsp red chili oil

Instructions

FOR THE PEANUT SAUCE

  • In a small bowl, stir in peanute butter, minced ginger, garlic, soy sauce, rice vinegar, and red chili oil until creamy. Set aside in the fridge until ready to serve

FOR THE WRAPS

  • Slice Jennie-O Sweet Thai Chili Turkey Breast in 1/4 inch slices until you have about 1 pounds worth of turkey. Vacuum seal remaining breast and store in the refrigerator
  • On a tortilla wrap, place red cabbage, bell pepper, carot and spinach in the center of the wrap. Drizzle with peanut sauce.
  • To roll, fold in both ends of the wrap, then roll list a burrito. Cut in half and serve with more peanut sauce. Enjoy!
