Swiss Avocado Toast
If you’ve never had avocado toast, you’re missing out. It’s incredibly easy to make and it includes two of my favorite things in the world should have been put together from the start. Bread and Avocado. And only the two of them!
Ok, maybe I lied. Its NOT only the two ingredients. I addedย some cheese on the toast and topped it with a runny sunny-side up egg, making this avocado toastย the perfect meal for breakfast or brunch. Adding some extra flavor into the avocado with some garlic, smoked paprika and of course salt and pepper; along with savory swiss cheese, this is not even close to a boring breakfast.
And with Mother’s Days is right around the corner this is SUCH anย easy thing to put together, and something to easily get the kids involved with. You can even toast the bread on the grill will the kids are mashing the avocado, and frying the egg. Well you probably don’t want the young ones frying the eggsย but, they can present to mom and get all the credit!
To be totally honest I’m not a fan of swiss cheese. It’s too funky tasting for me, but it’s tolerable when you have other flavors going along onย the avocado toast. But when you’re cooking up something for the Mom, and she’s a fan of swiss, sometimes you just have to suck it up and take one for the team!
This avocado toast is incredibly filling by the way, ย just one of these easily feels an adult up for the rest of the morning. So if you’re craving something different from breakfast try some avocado toast, and like everything in life, top it with an egg. No seriously, EVERYTHING in life can be solved by topping it with an egg.

Swiss Avocado Toast
Ingredients
- 2 slices sourdough bread
- 4 slices swiss cheese
- 2 whole avocados
- 1 clove garlic
- 1 tsp salt
- 1/2 tsp pepper
- 1/4 tsp smoked paprika
Instructions
- Place the bread on a grill or in the oven at 350 for about 5 minutes
- In a bowl mix avocado, garlic, salt pepper, pressed garlic, and smoked paprika.
- Flip the bread and place 2 slices of cheese on each slice of bread. Cook/grill for another 5 minutes
- While the toast is finishing, fry up a sunny-side up egg. When the toast is ready, spread a generous portion of avocado on top of the toast and top with an egg. Enjoy!
