In a skilled or dutch oven, heat oil to 375F. Meanwhile, combine mashed potatoes, cheese bacon and garlic salt in a bowl; set aside.
Take an ice cream scoop to form mashed potato balls. Dredge in a bowl of 2-3 beaten eggs, cover in breadcrumbs, and repeat. Pack into a ball and repeat until all balls are formed.
Fry mashed potato balls until golden brown in small batches abour 3-5 minutes per batch.
Serve with Sour cream and chive, gravy or any of your favorite dips!
