Margarita Shrimp on Grilled Avocado Toast

Ingredients

MARGARITA SHRIMP

  • 1 lb shrimp
  • 1 oz triple sec
  • 1 oz tequila
  • 1 tsp smoked paprika
  • 1 whole lime juice squeezed
  • 1/2 tsp kosher salt
  • 1/4 tsp ground cayenne pepper

GRILLED AVOCADO TOAST

  • 1/2 large tomato
  • 4 large avocados
  • 1 tsp kosher salt
  • 1 clove garlic minced
  • 1 medium serrano pepper
  • 1 whole lime juice squeezed
  • 1/4 cup chopped cilantro
  • 4 pieces ciabatta bread or anything that has a good crunch

Instructions

  • In a bowl add shrimp, with triple sec, tequila, smoked paprika, lime, kosher salt, and cayenne pepper. Let marinate in the fridge for about 15-20 minutes
  • For the Guacamole combine, chopped tomato, avocados, salt, garlic, serrano pepper and cilantro. Squeeze a little lime on top, and let set in the fridge.
  • Preheat your grill on high heat, and cook shrimp on one side, with butter bread on the other. Grill until shrimp is opaque and your bread has nice grill marks on them.
  • Top your toast with guacamole, and shrimp. Optionally, garnish with a little cilantro and cojita cheese. Enjoy!
