Chop your potatoes length-wise in quarter inch slices
Toss the potato slices in a batch of ice cold water.
Let them sit for about 10-15 minutes, this will make them less starchy and keep the color nice and white!
Drain and pat dry in a colander. Add a little salt and pepper to taste.
Lay the potatoes in a glass baking dish, baking pan, or cast iron skillet.
Place in the center rack of your oven for 10-12 minutes
Remove from the oven, and top with cheese and green onions, and anything else you'd like to top them with!
After about 10 minutes the cheese will be nice and melted and potatoes cooked all the way through.
Serve with sour cream and enjoy!
