Cut apricots in half. place in a zip lock bag with whiskey and let sit in the fridge for at least 30 minutes, up to 24 hours.
Mix together white flour, sugar, baking powder, salt and milk in a bowl. set aside
Preheat your grill to 350F. place apricots on grill face down and for about 5 minutes until they get nice char marks. Set them in a skillet with 1/2 cup sugar, cinnamon, and about 1 oz of whiskey (optional)
in a large skillet (about 18 inches) melt 1/2 cup of butter, then pour in your batter. Take the apricots from the other skillet and pour into the skillet that has the butter and batter. Do not stir.
Close the grill and let cook for about 30-40 minutes until the batter is nice and golden brown on top. Let cool for about 5-10 minutes, then serve up with a nice cold scoop of vanilla ice cream. Enjoy!
