Omelete Hash Brown Waffle Sandwich

Hash browns cooked in a waffle iron to great the bread for an amazing omelette sandwich with bell peppers and loaded with cheese. Super yummy and filling!

Ingredients

hash browns

assorted bell peppers
chopped

butter

olive oil

grated cheese
more if you love cheese.
Instructions
With your hash browns prepped, turn your waffled iron on and coat it with about 1-2 tbsp of oil
Scramble your eggs with a pinch of salt, and chop the bell peppers.
Load up the iron with as much hash browns as it can hold and close it. If it looks overloaded don't worry, the iron will pack the potatoes down.
In an omelette pan (or medium pan if you don't have that) cook the bell peppers in 2 tbsp of butter for about 1-2 minutes on medium heat.
Add in the scrambled eggs and let cook for a minute or once the egg begins to bubble.
With a spatula separate the egg from the pan if needed, then flip and cook for about 1 minute.
Take off direct heat, add about 1/4 cup grated cheese and fold the omelette over the cheese and set aside.
Check your potatoes, they should be nice and golden brown. With a fork, lift it out of the griddle and set on a plate.
Separate the hash brown waffle into 2 halves.
Add the omelette on to one half, add more cheese on top and cover with the other half. Cut in half and serve. Enjoy!
Notes
Note: this is pretty filling, so one half of this sandwich can feed 1 person.
