In a bowl, add shrimp, with paprika, cumin, salt, pepper, tequila triple sec and juice from lime. let it sit in the fridge for about 10 minutes. Preheat grill
While the grill is preheating, mash avocados, chopped red onion, minced garlic, paprika, salt, pepper, Serrano pepper and cilantro. Mix together, then squeeze in juice from lime. This gives it flavor, but more importantly slows down the browning process.
Slice baguette into 1 inch slices, and bring them out along with your shrimp to the grill. Brush some melted butter on your baguettes slices and place them on the grill.
Grill shrimp for about 3-4 minutes per side, until opaque and curled. Bring everything off the grill.
Chop up your shrimp into bite sized pieces. Add a scoop of guac onto your toasted baguette, along with some shrimp. Enjoy!
