These Caprese avocados make a great mid day snack, light lunch, or side dish for dinner. Theyโ€™re full of flavor, and textures from every which way.

As an admitted caprese addict โ€“ Iโ€™m a huge fan!

So far these caprese avocados, I was feeling a little ambitious, and decided to make my own balsamic glaze.

Let me be the first to admit โ€“ unless youโ€™re in a bind, this is not worth the smell that it makes in the kitchen!

stunk up the whole house full of vinegar, so if youโ€™re going to go this route โ€“ either give the family a fair warning, or bust out the side burner on your grill in the back yard!

So youโ€™ll probably be better off just buying the balsamic glaze premade at the store, itโ€™s a fun process, but youโ€™re reducing balsamic vinegar down for 15-20 minutes so just be forewarned!

At the end of the summer, when your tomatoes and basil are ready for harvesting, caprese anything is a no-brainer. And caprese avocados is the best of all good things summer.

Caprese Avocados With Balsamic Glaze

Ingredients

FOR THE BALSAMIC GLAZE

  • 1 cup balsamic vinegar
  • 1/4 cup brown sugar

FOR THE CAPRESE AVOCADOS

  • 2 avocados
  • 8 oz fresh mozzarella
  • 1/4 cup basil
  • 1 cup cherry tomatoes
  • salt and pepper to taste

Instructions

FOR THE GLAZE

  • whisk in brown sugar to balsamic vinegar. simmer on low until reduces to half its volume. Pour into a squeeze bottle and chill in the fridge; about 30 minutes.

FOR THE CAPRESE AVOCADOS

  • Cut Avocados in half and remove the pit. Take a spoon and scoop out a little of the inside to make a bowl.
  • Slice mozzarella into 1/4 inch strips. cut cherry tomatoes in half, and chop of fresh basil. Place into each avocado half
  • Season with salt and fresh cracked pepper, and drizzle with balsamic glaze. Enjoy!
