Preheat oven or air fryer to 400 F. In a shallow bowl or plate, add two scrambled eggs. in a 13×9 baking dish, smash up chips and stir in cumin and paprika
Dip tilapia, in egg wash, then in tortilla chip breading. Liberally coat both sides of your tilapia with the tortilla chips. Place on a cooling rack over a baking sheet. Or in your air frying basket…contraption.. thingy..
Cook for 10 minutes.
FOR THE JALAPENO LIME RED CABBAGE SLAW
Slice up your cabbage into thin pieces. Mince garlic and jalapeno. Add it all in a bowl and squeeze in juice from lime. Place in fridge until the fish is ready.
Chop up fish into bite sized pieces. Add on a warmed tortilla and top with slaw. Enjoy!
